What Wine Actually Needs

Temperature

The widely used storage target, and the reason a food refrigerator will not do: at 37 degrees wine ages far too slowly and corks suffer. Movement matters more than the exact number. A steady 58 beats a cellar swinging between 52 and 64.

The axis that separates real wine storage from a cold box. Too dry and corks shrink and let air past, slowly and invisibly. Too damp and you get mold on racking and labels lifting. A kitchen refrigerator holds neither end of this.

Constant vibration disturbs sediment and is thought to accelerate ageing. It is why wine units use compressors chosen for smoothness, why bottles should not rattle against racking, and why a failing fan bearing is worth fixing sooner than it seems.

Ultraviolet light degrades wine, which is why bottles are made of dark glass in the first place. Wine unit doors are UV treated for the same reason, and it is one more argument against storing anything serious on an open kitchen rack.

For a few days, yes. For storage, no, and for two reasons rather than one. A food refrigerator runs around 37 degrees, far below the 55 that wine wants, which suppresses ageing and is hard on corks. More importantly it actively dries the air, because removing humidity is part of how it keeps food fresh. Dry air shrinks corks and lets oxygen past over months, and you will not know until you open the bottle.
A wine cooler is an appliance: a sealed cabinet with its own refrigeration, holding anywhere from a dozen to a few hundred bottles. A wine cellar is a room, insulated and vapor sealed, with a separate cooling system that conditions the whole space. Not necessarily, and this is the most common false alarm we get here. The question that separates normal from broken is whether it still holds temperature. Running constantly and holding 55 means it is winning under load. Running constantly while the temperature climbs is a real fault.
